Paleo Ginger Zucchini Bread

This is one of those recipes that are delicious and healthy at the same time. When something is delicious, people often don’t care if it is healthy. But, serve this paleo ginger zucchini bread at a party and people will love it (without even suspecting it is healthy, too). Or, add it to your paleo diet plan and improve your diet immediately.

Ingredients:

  • 1 cup Almond flour
  • 1/2 tsp Sea salt
  • 2 tbsp Cinnamon
  • 1 tbsp Ground ginger
  • 2 tbsp. Honey
  • 1 tsp Ground cloves
  • 1/2 tsp Baking soda
  • 1/2 tsp Allspice
  • 1/4 tsp Nutmeg
  • 1 tsp Vanilla
  • 1 Zucchini (small, grated)
  • 3 Eggs

Instructions:

  1. Preheat oven to 350 degrees F.
  2.  Combine the almond flour, salt, baking soda, and spices in a bowl. In a separate bowl, mix the remaining ingredients. Whisk well and add to the dry.
  3. Brush a loaf pan with coconut oil or cooking spray. Pour the batter into the pan and bake for 40 to 50 minutes, until a toothpick inserted in the center comes out clean. Allow to cool before slicing.
